Mix of mince and chopped meats and bacon and/or fat, from 100% acorn-fed Iberian pigs and truffle, seasoned with salt and authorized condiments and additives, kneaded and stuffed into natural (cular) or artificial (velón) casings, where appropriate, which has undergone a maturation/drying process, which is characterized by its red coloration and its characteristic smell and taste.
